Made the BEST soup ever tonight!!

It has been a long time since I have blogged (months). I am doing VERY well on it. I have stuck to my 1400 calorie diet and I am down a big 170 pounds so far. I weighed in a 330 a few days ago.

Today I was talking to my sister and wanted to invite her over for soup tonight because she was saying hard hard it is (she is also doing the diet at 1200 calories) for her to get the full feeling all of us big people LOVE. I told her I can make her a soup for under 200 calories that would more than fill her up. It didn't work out for her to come over so I decided to make soup anyways but the way I would like it. It came out SOOOOOO good I thought I would post it incase anyone else wanted to make it. It is easy to make, tastes very good and is spicy!!! If I would make it for my sister I would not make it as spicy as I did. Well here we go!


Here is what you need to make the soup: Serving Size 6, 164 calories per serving
  • 3 can's of Swanson's Chicken Broth 60 Calories
  • 3 Chicken Mozzarella & Roasted Garlic Sausage's (from Sam's Club) 360 Calories
  • 3 Med size (3 1/2 cups) of some Sweet Onion 224 Calories
  • 3 Cups Sliced Mushrooms 46 Calories
  • 1 1/2 Cups Chipotle Salas Safeway Select 180 Calories
  • 1 Bellpepper (1 cup) Red Bell Pepper 46 Calories
  • 2 Serrano Peppers 8 calories
  • 1 Cup chopped red cabbage 28 Calories
  • 1 Bag Bean Sprouts by Life Force 30 calories
  • 1 good handful of Cilantro 0 Calories
  • 2 cups water 0 Calories
  • 1 Tablespoon Chili Powder 0 Calories
  • 1/2 Tablespoon Garlic Powder 0 Calories
  • 1/2 Tablespoon Onion Powder 0 Calories
  • 2 Teaspoons of black pepper 0 Calories
  1. Get a big soup pot and spray some calorie free butter spray in it
  2. Then cut up the onions into fairly long pieces and throw in the pot
  3. Chop up the sausage also put into the pot
  4. With the pot covered, turn the heat on Med/High on the stove
  5. Chop up the Bell Pepper and throw into pot (stir)
  6. Dump the 3 cups of mushrooms in the pot (stir)
  7. Chop up the cabbage and dump into pot (stir)
  8. Mince the Serrano peppers and dump in pot (stir)
  9. Leave the pot covered and stir every once in a while until onions look soft
  10. Then put in the 1 1/2 cups of salsa into the pot
  11. Dump the 3 cans of broth into the pot
  12. Dump the 2 cup of water into the pot and give it a good stir
  13. Dump in the bag of Bean Sprouts into the pot and stir again
  14. Chop up the cilantro and put in pot
  15. Then put in all the spices and give it a stir again
  16. Turn the heat to a Med/Low flame
  17. Bring to simmer and let it simmer for 10 min stirring every once in a while
  18. Dish out into 6 bowls and Enjoy!! :)
It is really good to add some instant Brown Rice from Minute Rice (150 more calories for one serving)
